One of our most favorite breakfast recipes :)
What do we need:
1/4 cup + 3 tbsp almond flour
3/4 cup semolina flour
2 ripe bananas
1/2 tsp baking soda
1 tsp baking powder
1 tsp vanilla extract
1 tsp pumpkin spice
1/2 tsp cinnamon powder
1 tbsp maple syrup (add more if you like your pancakes sweeter)
1/2 cup almond milk (add more if needed to make a smooth thick pourable batter - not too runny - if the batter becomes too runny add some flour)
a pinch of Himalayan pink salt
How do we make it:
Mash the banana to make a smooth paste, to this add the rest of the wet ingredients.
Mix all the dry ingredients in a separate bowl.
Combine the dry and wet ingredients by whisking slowly until there are no lumps in the batter.
Adjust the consistency of the batter if needed by either adding almond milk if it is too thick or adding extra flour (semolina or almond) if the batter is too runny.
Pour small round pancakes on a hot skillet and cook on both sides until done.
Time to eat:
Stack the pancakes and top them with sliced bananas, syrup, sprinkle some pumpkin spice and some granola for the crunch.
